Sweden: kanelbulle
The original. A cardamom dough with cinnamon-sugar filling, knotted or spiraled and topped with pearl sugar. It is so central to Swedish life that it has its own holiday, Kanelbullens Dag, on October 4.
Denmark: kanelsnegl
The cinnamon snail. Often built on laminated, croissant-like pastry (wienerbrod), which gives it a flakier bite than the Swedish bun. It is a flatter spiral, sometimes finished with a light icing or chocolate. Copenhagen's bakeries made the modern kanelsnegl world-famous.
Norway: kanelbolle and skillingsbolle
Norway's soft, round cinnamon bun. The skillingsbolle, or shilling bun, is the Bergen classic. It sits closer to a plain sweet roll than the laminated Danish version.
Finland: korvapuusti
Literally slapped ears. The dough is cut and pinched at both ends so it bakes into a distinctive ear shape, with a dense, cardamom-heavy crumb and pearl sugar on top.
