What is a cinnamon roll only bakery?

A bakery whose entire food menu is cinnamon rolls, flavour variations of them, and a drink to go with them. Savoury roll variants still count, because a cheese and vegemite scroll is the same coil with a different filling. A case with croissants, cookies, bread or sandwiches as menu peers does not count, however good the roll is.

Why do these shops sell out so early?

Because there is nothing else to sell. A general bakery that runs out of rolls still has a full case, so it plans conservatively. A single-product shop's entire day is one item, so it bakes small batches through the morning and closes when they are gone. Treat the posted closing time as optimistic and the sell-out time as the real one.

Why is my favourite cinnamon roll bakery not on this list?

Almost certainly because it sells other things. Cinnamon Works has been at Pike Place since 1983 and is a full scratch bakery. Isles Bun & Coffee has a claim on the world's best roll and runs a 43-item menu. Rollers Bakehouse in Manly puts a lamb sausage roll next to its scroll. All three are excellent, all three are on the map, and none of them is a specialist. The word stops meaning anything if you let them in.

How is this different from the pop-ups guide?

This list is about the menu; the pop-ups and market stalls guide is about the premises. They overlap, since several single-product bakers work markets or shared kitchens, but plenty of pop-ups sell a broad pastry range and plenty of cinnamon roll only shops have a permanent counter.

Cinnamon Roll Only Bakeries, Worldwide

Most bakeries treat the cinnamon roll as one item in a case full of croissants and cookies. These do not. Each one built its whole counter around a single pastry, which changes what the roll is allowed to be: when it is the only thing you make, it gets the good dough, the whole oven, and every flavour experiment you have. The bar for this list is the menu, not the reputation, and a lot of famous rolls do not clear it.
